Rib Roast
Standing Rib Roast (a.k.a. bone-in ‘prime’ rib) - $28/lb. (sold by the number of bones - each bone weighs approximately 2 lb. - 2.5 lb. each.)
Boneless Rib Roast - $30/lb (sold by weight - can be cut to size between 1.5 lb. - 12 lb.)
New York Roast
A great alternative to rib roast - equally as tender and slightly leaner throughout.
Boneless - $24/lb. - (sold by weight - can be cut to size between 1.5 lb. - 12 lb.)
Brisket
Whole (mix of flat and point) - $10/lb. (whole brisket is around 10-15 pounds, can be cut to size)
Flat or point - $12/lb. (flat runs around 6-8 lb, point 3-5)
Tenderloin
Available as a whole roast, around 3 pounds, or cut size - $36/lb
Serving Size Guidelines
We recommend a serving size of 1/2lb per person for boneless beef. For bone-in cuts, we suggest ordering 1lb per person. Consider the following when placing your order - do you have more than one protein option? Do you want leftovers? Will certain guests eat more or less meat than average? While we’re happy to give you the best estimate based on the number of people you’re serving, you know your guests. We will do our best to get as close to your requested weight as possible, but please note that the total weight may vary slightly (by up to 1/2 lb.)
